Het verslag van Peter Sisseck over Psi, Flor de Pingus en Pingus 2021

Year 2021 in Ribera has turned out quite bright after some fears of too hot and dry growing season.
The winter and spring of 2021 were dry to very dry. In April we started to get some rain and it was feared that it was too little too late. A fairly cool spring did not help as growth was slow.
Flowering happened earlier than expected and was prolonged, which caused irregularities in fruit set. A big cleaning job was expected.
Mildew was an ever-present factor, but with great attention to detail it never showed.
Although the days were hot, the nights were unusually cold, leading to a lower average temperature than usual. Ripening was 7 to 10 days behind 2020.

The harvest began on September 20 in San Cristóbal, the second "lieu dit" of Pingus. The grapes were reaching 14 degrees of potential alcohol. And we had good acidity too. The pH was somehow higher than normal, probably due to stress during the summer.
Very soft and easy fermentations this year. Natural yeast was abundant. Also, color extraction was very easy, meaning we were able to ferment at 22C and only make over 30% of the tank volume. In short, maintaining freshness and avoiding over-extraction.
Due to the fairly high pH, the malolactic fermentation was also very fast and by the end of November we were able to start moving some of the finished wines into barrels.

As we have been doing since 2012, Pingus is aged in used barrels for 12 months and for Flor de Pingus we still use some new barrels, but not more than 20%. This year we gave all new barrels a month of PSI to season them a bit. We have also introduced 2 new wooden vats (15HL) for the aging of Flor de Pingus for the time being. Over time the idea is to use them for the aging of Pingus.

At PSI we have a new team in charge of operations. Lula (María Luisa Carretero) is a a very important change. She is working with such precision that it is a real pleasure, her hand and knowledge can be easily felt in the resulting wine.

The harvest began on September 22 in Peñaranda and lasted 12 days. It was the biggest harvest we've ever done.

Pingus 2021

Pingus is again and again the standard bearer of our project. It has reached a level of perfection in the management of the vine that allows us, year after year, to produce something outstanding.

This 2021 is no exception. Deeply colored, but not black with beautiful ruby sparkles. With a very deep nose of ripe fruit, Pingus is always more blue than red fruit, so it is very important that it is always on the fresh side. It should never get too jammy or heavy, this is one of the real challenges of making wine in these warm years.
A great mouthfeel with the texture of what I call 3D tannins, this crazy balance between relatively high pH and fairly rich tannins. I really think it is the hallmark of the great Tinto Fino from *Ribera del Duero”. And in 2021 I think we hit the nail on the head. Not to mention the length that the wine carries back and that lasts.

IMHO this is like a repeat of the great Pingus from 2000.

Flor de Pingus 2021

The 2021 Flor de Pingus is less dark in color than Pingus itself. Pure ruby light. On the nose it is very fresh and more red fruit than blue. The 4% Garnacha that we have been adding through replanting surely helps here. Flor de Pingus is always lighter than Pingus but the quality of the tannins is equally important but we aim more for a lush feel than anything structural. This 2021 is very much the ideal of this. In fact, I am very proud of this wine.

And now to something very different!

Since we started in 2007, we have worked very hard to find the right style for PSI. Not only the vinification but also the sources from which we obtain the grapes. I would say that with 2021 we are about to be there. We have identified a particular village from which we now source around 35% of our grapes. The best vineyards in this town are on very large limestone soils that mark the wine with a lot of tension.
Psi 2021 is never the deepest colored wine and I'm happy about that. Lots of red fruit and tons of freshness from both the Garnacha 10% and the highest vineyards around 900m on average make this wine so much more than just the 3rd wine we make. It is really becoming a very marked wine, from the terroir, although light and fresh (for a Ribera wine) it is also a wine with a long and persistent finish full of tension.
