Description
This wine the tribute of Pablo Calatayud, the owner of Celler del Roure (still a family estate), to his mother Amalia and her sisters.
This white wine was made with red grapes, hence its light pink colour.
A wine with a real personality.
Vinification
100% Mando - a varietal which Pablo has saved from oblivion. He makes a white wine out of it, via the saignée method, without pressing.
Fermentation takes place in old tinajas which Pablo restored himself. This is also where the wine is aged for 6 months before being bottled.
Tasting analysis
A slightly pink colour with greyish reflections. The nose is full of fresh flowers (e.g. almond blossom) and spicy Mediterranean notes, not forgetting the typical Levante plums which gave the cuvée its name.
Fresh on the palate, with a touch of flowers again, but also apples.
Rich on the finish. Quite original!
Storage potential
2-3 years.
