Description
José Luis Mateo's personal creation: he has revived a long forgotten white grape, the Monstruosa de Monterrei, which he had found in his vines.
He then replanted some 750 plants of it in a small vineyard.
The high acidity and structure if this "monster" gives it a very good ageing potential. For the wine freaks!
Vinification
The grapes are picked and vinified in whole bunches, and not de-stemmed. They ferment with indigenous yeasts only. No malolactic fermentation takes place. The wine is aged on its lees in stainless steel tanks.
Storage potential
Till 2027.
Serving
Chilled in a large glass after decanting, preferably.
