The 2012 Parotet is a blend of 75% Mandó and 25% Monastrell fermented in stainless steel with indigenous yeasts and matured in underground 2,600-liter terra-cotta amphorae for 14 months. The bottle I tasted showed austere and serious; a little closed before slowly developing some earthy sensations, notes of plums, some Mediterranean herbs (rosemary, lavender, thyme) that turned more balsamic with camphor sensations. The palate is medium-bodied, quite austere and linear with fine tannins, a velvety texture and some of the elegant rusticity so typical of the Monastrell. This is also a good value. 16,000 bottles were produced.
