Bubbles with a twist.
Pet-nat from Mandó!
Last Friday, we already mentioned
Celler del Roure by
Pablo Calatayud.
This is one of the most important producers we work with. Of course, we want to collaborate with wineries that focus on quality, but just as important to us is the personality and character of the winemaker.
Working with kind, genuine people is so much more enjoyable than simply “doing business”.
So we always go for the first option!
The wine I’d like to present today is yet another example of Pablo’s generosity of spirit:
Les Filles d’Amàlia is a
tribute to his mother (yes, her name was indeed “Amàlia”...).
These “filles” are actually two blanc de noirs wines, both made from the Mandó grape – a nearly extinct red variety that yields very little colour and low alcohol.
“Les Danses”, the wine we’re focusing on today, expresses exactly what Pablo had in mind:
the bubbles dance – a tribute to his mother.
The 2023 vintage is exceptionally refined and precise. Only around 6,000 bottles were produced of this pét-nat – a single fermentation in the bottle.
In Spain, this is called the
ancestral method. It’s even older than the “traditional method” used for cava and Champagne.
In practice, it’s mostly used by natural winemakers or smaller producers and often results in lighter, more delicate wines.
That’s precisely what we have here.
This is the bubble of the summer:
only 11.5% alcohol, fine rosé sparkle and bright acidity.
Perfect for the hot days ahead!
And dance your way through summer!
