Spain’s most underrated and rare wines
Palo Cortado

You have undoubtedly heard of it before. But have you ever tasted it? Almost certainly not!

Yet this is a meditation wine of the highest order.

We are great fans ourselves. And as historic Palo Cortado becomes increasingly rare, we never hesitate when we are offered an allocation.
These wines are truly unique!

I can already hear many people saying: Sherry? Not my thing. Then try a Palo Cortado…
This is a world away from the basic Sherries that used to sit in your grandparents’ cupboard. This is tension in the glass, exceptional complexity and, above all, an almost endless finish. We offer them in many different styles and, most importantly, across a wide range of prices…

They come both from the classic Sherry region in and around Jerez, and from Montilla-Moriles, where the grape variety is not Palomino, but Pedro Ximénez. Both styles are interesting and well worth discovering.

They can also be paired with many different dishes or served as a dry conclusion to a meal alongside mature cheeses. The possibilities are truly extensive.

But what exactly is Palo Cortado? Originally, these were barrels intended to become fino Sherry. During regular tastings, however, an anomaly was sometimes noticed in the wine. The original chalk mark placed on the fino barrel was then crossed out, distinguishing it from the other barrels.
Until that point, the wine had undergone biological ageing beneath a layer of flor. Once the chalk mark had been crossed out, literally “Palo Cortado” in Spanish, alcohol was added so that the wine could continue ageing oxidatively, like an oloroso.
This explains the wine’s exceptional complexity.

Most Palo Cortados are aged for at least 25 years in the solera system. Some are more than 100 years old…

PX for Pedro Ximénez, Spanish for Pieter Siemens, who is said to have brought this grape from the Rhine valley to Andalusia in the 15th century, The Don PX is the perfect example of the sweetness of this grape. The Marqués de Poley series comes from another bodega bought by Toro Albalá. No blending. Owing to their exceptional quality, the wines from the old casks are all bottled separately.

Palo Cortado in brief

What is Palo Cortado?
Palo Cortado is one of the most distinctive and rare aged wines from Andalusia. Its name literally means “a crossed line”. At Gutiérrez Colosía, the best barrels of Fino are marked with a line. After a second, strict tasting, the finest barrels are selected by crossing the first mark with a second line.
Why is Palo Cortado so rare?
Historic old Palo Cortado is becoming increasingly rare and is often released in very small quantities. That is why we take the opportunity whenever we are offered an allocation of these wines.
Which grape variety is used for Palo Cortado?
That depends on its origin. The Palo Cortado Reserva Familiar from Gutiérrez Colosía in Jerez is made from 100% Palomino. The Palo Cortados from Toro Albalá in Montilla-Moriles are made from 100% Pedro Ximénez.
How long can Palo Cortado be kept?
These old, oxidatively aged wines have an exceptionally long ageing potential. For several Palo Cortados in our range, we even indicate an unlimited ageing potential. Once opened, a bottle can also easily be kept for up to a year.
How should Palo Cortado be served?
We serve Palo Cortado cool, at around 8°C, in a large glass. This gives the wine’s aromatic complexity enough room to fully express itself.
