Fátima Ceballos has been doing for several years what should have happened much earlier: producing top white wines in one of Spain’s most exciting wine regions:
This region in the interior of Andalucía, just south of the beautiful city of Córdoba, has all the ingredients to produce great wines: old Pedro Ximénez vines, outstanding terroirs with poor sandy and limestone soils, and a perfect climate.
Yet until now, it was only known for outstanding sweet wines.

Fátima was the first to recognize the true potential of the Pedro Ximénez grape in this region. It is a variety capable of producing complex and full-bodied white wines with a very distinctive character.
In other parts of Spain such as Priorat (Terroir al Límit) or Málaga (Victoria Ordóñez), this was already known.
But here, in the birthplace of PX, no one had yet vinified this grape with a focus on terroir. And there is only one estate with vineyards on all the top sites of Montilla-Moriles:
Toro Albalá, world-famous for its sweet wines.
It is precisely Fátima Ceballos who, after several years working at Gayda in the Languedoc, returned to her roots and decided to produce top-level wines there. And so she did!

I tasted her wines 4 years ago in Barcelona. A sommelier from a well-known restaurant poured them blind for me and I was immediately impressed!
What an incredibly original and complex wine! This was top-level material!
I was even more impressed when I discovered the region and the grape variety behind it!
A few days later, when I spoke with her, my surprise grew even more. At that time, she was working on a red wine together with Raúl Pérez in Bierzo! And everything comes together again…

In the meantime, we have received the 4th vintage of this standout white wine.
And yes, as always, extremely limited and hard to obtain, but we now have it in stock!
In Spain, sommeliers in top gastronomy absolutely love it… especially at this price!
