With his Viñátigo project, Jesús Méndez sets out to give a new face to native Canarian grape varieties that had almost disappeared. All his wines are made in very limited volumes.
‘Pie franco’ on volcanic subsoils. A blend of ungrafted indigenous white varieties from the Canary Islands.
The varieties selected and their proportions change from year to year, depending on the harvest. The Listán Blanco comes from ungrafted vines more than 100 years old, grown between 500 and 900 metres above sea level in the north-west of Tenerife. The volcanic soils are young, well drained and very rich in minerals.
Vinification
Hand-harvested from mid-September to the end of October. The grapes are taken to the winery in 18 kg crates.
They are then chilled overnight at between -5 °C and 0 °C to prevent oxidation. Fermentation takes place in stainless steel with indigenous yeasts. Sulphite additions before bottling are kept to a minimum.

Trial analysis
In the glass, a pale colour with green hints. A very fresh nose of citrus, white fruit and a touch of fennel. The palate is just as fresh, with a hint of minerality. A summer wine.
