A return to the roots of Mallorcan white grape varieties with this Premsal, sourced from the single vineyard Camí de Felanitx. Planted in 2010 on red, iron-rich soils (terra vermell), the vines are trained entirely en gobelet, honouring the traditional planting methods of the island.
Vinification
Manual harvest in small baskets at the end of August. The whole clusters are pressed immediately after picking. After 48 hours, the free-run juice ferments naturally at 16°C, without any additives. The wine then continues to mature on the lees in stainless steel tanks until bottling.

Trial analysis
Small production of 1,060 bottles, reaching only 12.5% alcohol, with an unusual level of acidity for this grape variety. Pale in colour with a lovely brilliance. Very delicate on the nose, showing white stone fruit, pear, and orange blossom. On the palate, a slight saline touch, but above all an elegant and fresh impression with a mineral finish.
