Jesús Méndez revives the old ungrafted vines of the volcanic terroirs of the Canary islands, often long forgotten.
This cuvée blends 4 white varietals and its production is only 800 bottles.
Vinification
Fermented in Allier oak barrels, then aged in its lees, with bâtonnage, for 6 months. Then a few more months of ageing in stainless steel tanks before bottling.
Storage potential
5 years.
To serve
Decant and serve around 13°C in a large glass.
Trial analysis
Deep, shimmering golden colour.
Very expressive on the nose (nuts, toast, then citrus), and mineral too. Confirmation on the palate, which seems creamy and ripe at first, then you receive a uppercut of freshness.
A stunning wine from Tenerife.
