Negramoll is the main grape used in Tenerife to make everyday consumption wine. Yet, if one check its yield and pays attention to the winemaking, this varietal can produce vinous and very interesting wines. The production of this cuvée is only 4,500 bottles.
Vinification
Manual harvest in September. The grapes are transported to the winery in 18kg crates. Cool maceration at 0°C before fermentation and then about 8 days of maceration during vinification. Aged for 6 months in 2, 3 and 4-year-old 225l and 300l French oak barrels.

Trial analysis
The colour already shows some evolution. Coffee aromas, soft on the palate, smooth tannines, salty notes. And yet, this wine has a volcanic
character.
