Vinification Rodrigo Méndez
The vinification varies depending on the wine.
Cíes Blanco 2024 is aged for eight months, half in stainless-steel tanks and half in neutral wooden vats. The wine does not undergo malolactic fermentation.
Sálvora is harvested by hand and fermented with indigenous yeasts in old 600-litre wooden barrels. It does not undergo malolactic fermentation either.
A Cruceira ferments in old 225-litre oak barrels and is then aged in barrel for a further twelve months.
