This latest addition to the Castro Candaz range was first produced in 2018. It is the only Mencía made from grapes sourced from several vineyards, both in the northern Chantada area and in the Bibei area of Ribeira Sacra. Pure Mencía fruit!
Vinification
The plots used for this wine are located in Chantada and Bibei, the northernmost and southernmost parts of Ribeira Sacra, respectively, on predominantly granite soils. The grapes are harvested earlier to ensure that the wines never exceed 13% alcohol. Maceration and fermentation take place in stainless steel tanks using fully destemmed grapes, a unique feature within the range.

Trial analysis
This is the youngster of the bunch. The nose is bursting with red fruit, exuberant, with a slight reduction that disappears after swirling the glass. The aromas are strongly reminiscent of carbonic maceration, although that is not the case. On the palate, vibrant young fruit with still powerful tannins. A long finish for such a youthful wine.
