Valdecañada comes from a steep vineyard in Bierzo, located at 700 to 800 metres altitude near Ponferrada. Since the 2015 vintage, the grapes have been vinified separately. Before that, they were used in the Ultreia wines. Old Mencía vines planted on slate and schist soils give the wine a distinctly mineral and fresh profile. Extremely limited production, fully focused on finesse and terroir expression, with great freshness and low alcohol levels.
Vinification
Spontaneous fermentation with indigenous yeasts. Depending on the vintage, whole clusters are used fully or partially. Long maceration followed by ageing in neutral 225-litre French oak barrels. Minimal intervention winemaking. Alcohol: 12.5%.

Trial analysis
Light ruby red colour with aromas of red cherry, wild herbs and earthy notes. Fresh acidity, fine tannins and a tight minerality give the wine an elegant, almost Burgundian style. Concentrated yet refined, with soft ripe tannins and excellent freshness. Long, fresh finish.
