Envinate, one of the most acclaimed projects of the new generation of Spanish winemakers, is the creation of Roberto Santana, Alfonso Torrente, Laura Ramos and José Martínez.
These fab Four met during the enology studies at the University of Alicante and decided to set up a common winery. The pillars of their philosophy: old vineyards and non-interventionist winemaking.
Palo Blanco is made with the gapes of centenary vines planted on the black volcanic soils of Palo Blanco in the Orotava Valley, in the north-east of Tenerife.
This area is quite wet in spite of the altitude (600m) and the vines are conducted in the Cordon Trenzado method so as to enhance the air circulation.

All the grapes are hand-harvested and fermented with indigenous yeasts in cement tanks before ageing in 2000 litre used vats for 12 months.
