This fantastic Pedro Ximénez is at the top of Fátima Ceballos' great range of white wines. Fátima Ceballos is the most famous and the most innovative oenologist in this region.
This PX is aged in oak. It expresses perfectly this grape, but also the unique terroir of Montilla.
Vinification
Harvested by hand in small baskets.
The best grapes are selected in the vine, then when they arrive at the cellar.
Very soft pressing, natural decantation of the most so as to obtain le purest vin possible.
After one week, with the indigenous yeasts of the vineyard, fermentation is completed in used oak barrels. The wine then stays there for 8 more months on its lees, with regular bâtonnage.

Best decant this wine before serving it - chilled - in a large Burgundy wine glass.
Trial analysis
Nice green reflections in the glass.
On the nose, floral and pastry aromas (the mark of French oak, surely).
On the palate also, everything is in harmony. But some citrus notes make the rich, round texture livelier. A gastronomy wine. Very original.
