Spicy digestif based on Pazo de Señorans' orujo.
Vinification
After pressing the Albariño grapes, the marc (grape skins and pips) is put into small plastic barrels of 220l, this is where fermentation takes place. After about five days, it obtains a 4% alcohol content. This is then distilled twaice in copper kettles with direct flame. The final distillate varies between 55 and 65% alcohol, which is then diluted with the purest water. After this, the distillate is stored in stainless steel vats for stabilisation. Pazo is one of the few in Galicia that honours the production of Orujos, doing everything in-house on top of that. For the licor de Hierbas, a strict selection of herbs is added and 68gr of sugar per litre. Chamomile, coriander seed, anise, orange and verbena are the main ingredients.

Trial analysis
An amber colour but very clean brilliance in the glass. Intense aromas of the above spices take over, yet the basic Orujo holds its own. A soft sweet touch goes hand in hand with the bitters of the orange.
Wine estate

One the nicest estates in the DO Rias Baixas, and one of the best Albariño wines, Pazo de Señorans was instrumental in founding the DO Rias Baixas. Here, the quality level is very high indeed.
