A particularly fine Albariño distillate.

Vinification
The marc (grape skins and seeds) is transferred after pressing the Albariño grapes into small 220 L plastic vats, where fermentation takes place.
After around five days, an alcohol level of about 4 % is reached.
The liquid is then distilled twice in copper stills heated by direct flame.
The final distillate ranges between 52 and 65 % alcohol. It is then diluted with very pure water and stored for one and a half years in closed stainless steel tanks.
Pazo Señorans is one of the few producers in Galicia that preserves this old orujo tradition and controls the entire production process in-house.

16–18 °C, to achieve maximum aromatic expression.

Trial analysis
A crystal clear brilliance in the glass. Intense yet subtle aromas, clearly expressing the Albariño grape. Grassy and lightly spicy, with notes of white stone fruit and grape seed.
On the palate, the flavour is very fine. The alcohol level comes across as remarkably soft and well balanced. Pure and long on the finish.

Wine estate

One the nicest estates in the DO Rias Baixas, and one of the best Albariño wines, Pazo de Señorans was instrumental in founding the DO Rias Baixas. Here, the quality level is very high indeed.
