This wine is entirely devoted to the fresh, vibrant aromas of a young Pedro Ximénez. When the sweet PX wines undergo ageing, they develop the complexity of oxidative aromas, but at the same time their youthful aromas are gradually lost. With this wine, we capture everything that a sweet Pedro Ximénez loses after a long oxidative ageing in oak.
Vinification
After the harvest, the grapes are laid out to dry on mats between the vines, so that during the drying process they also experience moments of shade, helping them retain their acidity. The slow dehydration concentrates sugars, acids, and aromas. From one ton of grapes, only 300 kg remain. These are then transported in small crates to the winery. There, the dried grapes are pressed, yielding about 200 L of juice. Fermentation takes place in open-top oak vats which, after a while, are covered to slow down the fermentation and thus preserve the fresh fruit aromas.

Trial analysis
Golden colour. Plenty of fruit such as peach, apricot, and ripe plum. A subtle almond/toasted note from the barrel. Great balance in this sweet Pedro Ximénez, where fruit takes the lead but without oxidative aromas. A fine acidity gives the wine a fresh finish, nicely balancing the sweetness.
