Ànima Negra is the first wine created by the bodega and the namesake of the estate. It has become a true cult wine of Mallorca. The aim is to produce the purest Callet wine in the world. New vines are planted using seeds from the best mother plants, and without American rootstock. Since the 2016 vintage, the estate has adopted parcel-based vinification, which has significantly elevated the quality of all its red wines.
Vinification
The grapes are harvested by hand in small 10 kg crates. The first selection is done in the vineyard, and a second one takes place on the sorting table. After harvest, the grapes are stored overnight in cold rooms at 8 to 10°C to allow a slow maceration and fermentation to begin, enhancing the wine’s fruit expression.
The selected grapes are transferred by gravity into 4,000-litre French oak vats, where fermentation begins at a controlled temperature, using native yeasts.
Malolactic fermentation takes place in French oak barriques, where the wine also matures for 8 to 16 months depending on the parcel. After blending, the wine rests for another two months in stainless steel before bottling.

Trial analysis
A wine with a great personality. Slight notes of a evolution in the colour.
A spicy, earthy, very Mediterranean nose, with hints of roasted coffee and a discreet fruit. Made on limestone soils, with time, it will show the noble character of the great Burgundy wines.
In his younger years, the woody notes are a little bit too obvious, but time will heal this.
The mouthfeel is already most pleasant. A very elegant wine.
