ÀN/2 is the second wine of this estate. Like the fist one, Ànima Negra, it is mainly made with indigenous Majorcan grapes. But here, 15% of Syrah bring some more structure into the wine. Since the 2016 vintage, the estate has adopted parcel-based vinification, which has significantly elevated the quality of all its red wines.
Vinification
The grapes are hand-harvested in small 10 kg crates. The first selection is made in the vineyard, and a second one takes place on the sorting table. After harvest, the grapes are stored overnight in cold rooms at 8 to 10°C to allow for slow maceration and fermentation, enhancing the wine’s fruit expression.
Using gravity, the selected grapes are transferred to stainless steel tanks for alcoholic fermentation under temperature control. Malolactic fermentation takes place in concrete and partly in stainless steel tanks.
The wine is then aged for 12 months in oak barriques, primarily French, with a small proportion of American oak.

Trial analysis
A wine with great character and personality. Cherry red in colour, youthful and deep, with a touch of evolution. Very elegant, fully committed to a finesse-driven style. The nose is expressive and inviting, with Mediterranean herbs, earthy and lightly toasted notes, and fruit aromas of cherry and redcurrant. The oak is perfectly integrated and everything is beautifully balanced; the finish reveals a subtle roasted touch. On the palate, it is elegant and pleasant, with a fleshy mid-palate, depth, and structure. A wine with a mineral signature and a refined sense of grandeur.
