History Hacienda Solano
The Cubillo family owns some parcels of old vines in the village of La Aguilera. Until 2001, most of the grapes were sold to famous bodegas of the region; then the family decided to start a small winery to make their own wines. All the vines are farmed organically.
In 2016, Toni Sarrión and Agustín Cubillo mer at Mustiguillo's and started their collaboration. Now Toni is the co-owner and oenologist at Solano. 2016 was also the first year of production of the two single-parcel wines, Cascorrales and Peña Lobera, which are amongst Ribera's finest wines.
Toni aims for a maximum expression of the terroir and the magnificent old vines. The first step was to ban the use of new oak barrels, replacing them with 500-litre and larger barrels. Mostly older barrels, allowing the wine to speak more clearly in the glass. Parcel-based vinification is also applied to achieve a superb final result in the bottle.
