Vinification
Selection of the best parcels, each parcel is fermented separately. Maceration of 12-13 days, some parcels also receive a cold maceration for 2 days prior to 4°C. Elevage in 300L French oak barrels for 24 months. The best barrels are then selected for blending, followed by a further 12-month ageing in casks (total ageing 36 months).

Trial analysis
Bright and deep cherry red colour.
Very aromatic - red and black cherries, pepper, mint, vanilla and fine toasted notes. Once it has been given a little air, a juicier structure comes up.
A solid wine with a long finish, the perfect combination between a continental varietal and a Mediterranean climate.
