What a crazy wine!
Normally, Pedro Ximénez wines are aged in wood, in the solera system, acquiring their nice brown colour.
But the Don PX was not put into a wood vessel and is thus utterly different.
Vinification
Carefully selected grapes of Pedro Ximenez are harvested by hand, then exposed on mats in the Sun for 2 weeks so as to dry. Then they are pressed and fermented in stainless steel tanks.
When the perfect balance between sugar, alcohol and acidity is reached, the wine is fortified with Aguardiente (local, clear brandy). Then it is decanted in stainless steel tanks and tinajas. When the lees have naturally settled down, the wine is then bottled.

Trial analysis
Amber colour. Explosion of fig and ripe fruit on the nose, with a touch of chocolate.
Sweet and dense on the palate, with a very long finish, very sweet too..
