Vinification
After the manual harvest in small crates, fermentation takes place in large oak foudres that are no more than 10 years old. Fermentation is carried out exclusively with indigenous yeasts. Malolactic fermentation also takes place in oak.
After fermentation, Único undergoes what is probably one of the longest ageing periods of any red wine in the world: almost 10 years in wood and bottle. The different stages take place in various types of vessels: American and French oak, new and used barrels, ranging from 225-litre barriques to 20,000-litre vats. The choice depends on how the wine evolves.
The finest barriques of Único from the best vintages are kept separately. Reserva Especial is usually a blend of three vintages from within the same decade.

Trial analysis
All Vega wines combine concentration with elegance, while linking intensity to complexity and length.
Reserva Especial remains true to its style, with an unmistakable character: elegance, power, ageing potential… It is one of the most unique and timeless wines. Aromas that often appear in tasting notes include red fruit, blackcurrant, strawberry, cherry, plum, mint, fig, spices, liquorice, mocha, coconut and chocolate.
The wines often seem much younger than they actually are. Their structure is more refined than powerful. The aromas continue to open up in the glass, showing great complexity and a distinctly vinous character. The fresh and youthful acidity of Tempranillo is clearly recognisable and gives the wine a very lively taste. There are also many mineral notes, integrated into a silky structure that remains fascinating.
