Vinification
At Daniel Landi's, all the grapes are vinified in whole bunches, so as to obtain a cooler fermentation and a lighter extraction.
Daniel only uses indigenous yeasts and old foudres, both for the fermentation and for the ageing.
No correction is made during vinification and only a small dose of sulphur is added at bottling.

Trial analysis
Light colour. Floral on the nose (rose petals), but also spicy, with a touch of minerality (flint).
Rather slender on the palate, but the refined tannins bring a good backbone. No trace of sweetness here (like in many grenache wines), but a nice minerality and very long finale.
This wine deserves to be kept a while in the cellar.

The 2021 Cantos del Diablo was produced with grapes from 0.35 hectares of Garnacha planted in 1960 in the village of El Real de San Vicente (Toledo) at 900 meters in altitude, the highest vineyard in the Méntrida appellation. The wine has an impressive nose of violet pastille, intensely blue, if you know what I mean. It's a north-facing plot very close to the village on sandy granite soils with lots of silt, and it delivers chalky tannins and a citrus freshness in the wine. The whole clusters fermented with indigenous yeasts in oak vats with a 75-day maceration, followed by an élevage in 500- and 600-liter oak barrels for 12 months. 1,374 bottles and 40 magnums were filled in March 2023, yet the wine feels approachable and expressive, not dizzy at all.

Vitícola Mentridana is the successor to Dani Landi Viticultor. Dani, born in Méntrida, followed a similar path as his childhood friend Curro. Both studied oenology and began their careers working in small family-run bodegas. Eventually, they each created their own projects—Comando G for Dani and Fedellos for Curro. Now, their paths have crossed again: Dani decided to bring all his vineyards from the Méntrida appellation under one separate winery, Vitícola Mentridana. Curro now runs the day-to-day operations and makes the wines, always with Dani’s support.
